Caprese Salad

Caprese Salad

Tomatoes (it's best to use fresh ones from a farmer's market)
Red onion
Fresh basil (do not supplement with dried basil, trust me it won't do the job)
Soft mozarella (it's not the regular hard, rubbery stuff at the grocery store. This one is soft and fluffy.)
Olive oil
Balsamic Vinegar

Line a plate with the olive oil
Slice the tomatoes into thick discs, set on top of olive oil
Slice onions (maybe 3/4 inch), layer over the tomatoes
Slice the cheese into chunks or discs (as long as each tomato gets some), layer on top of the tomato and onions
Tear the basil leaves into pieces and cover the rest of the salad with them.
Lightly drizzle the balsamic vinegar over the entire thing.

I usually eat this with my hands, one tomato slice at a time. Here's a good link to some Caprese salad info:

I make this too, we love it!

We also love it with pasta or makes great paninis. I have yet to figure out Panera Breads sunn dried tomato spread, but I'm getting closer Impatient

I love caprese salad. Everytime I have lunch with my dad, that's what I get. If you guys see something called, "Buffalo mozzarella," I highly recommend it. It tastes excellent. It's kind of hard to find though.

i love this too! especially with the buffalo mozzarella but it is so hard to find! i never thought of putting onions on it my sister would love it with onions!
