Black bean tacos

I took a Morning Star Black Bean Burger, microwaved on high for 40 seconds, then flipped it another 40.

I crumbled/smashed it up and threw it in a pan on low while my two hard shell tacos baked in the oven at 350 for 5 minutes. Put the tiniest drop of olive oil so it would help soak up the taco seasoning. Sprinkled about 1/4 a taco seasoning packet (to taste).
Smash the burger til it's the consistancy you like your taco meat.

Chopped some tomato and lettuce while all that was going on, topped with hot salsa and had a scoop of Mexicorn on the side. It was a good lunch!

It's canned corn by Green Giant.
You could make your own as well with a bag of frozen corn, and sauteed red bell peppers and onion. I would probably even try frying the corn a second or grilling it.

If you put black beans in it, then it's Southwestern Wink
