Vegetarian Chili

Post  Becky on Tue Oct 27, 2009 3:11 am

3 MorningStar Farms Black Bean Burger patties
1 packet McCormick 30% less sodium Chili seasoning mix
2 cans (8 oz. each) OR 1 can (14.5 oz) diced tomatoes, undrained. (I used fire roasted diced tomatoes)
1 can (15-16 oz.) kidney or pinto beans undrained
green and/or red bell pepper diced
onion diced
garlic minced
drizzle of olive oil for cooking vegetables

Heat the burgers in the microwave on high flipping halfway through while the diced onions and pepper saute in olive oil. Once they are starting to get opaque, add minced garlic to taste. Don't let the garlic cook long, maybe a minute or two... while that is happening, smash the burgers then add them to the vegetables. Then add the beans and tomatoes or sauce. Bring to a boil then cover and simmer 10 minutes.

This has a very Tex-Mex taste. If you want to get even more creative and indulge a little, you could top it with Cabot cheddar or pepper jack cheese, Daisy sour cream, scallions, crushed tortilla chips.

Here are my left overs (sorry for the steam)

Yummo! I'll have to try that because I make chili a lot in the winter, and it's fun to try different types. Thanks Bec! Smile

I agree I might have to try that in the crockpot! Thanks.

I can't get Brad to try the stuff, he's nuts. One of those example where his pain in the ass fear of change catches up with me hehehe

In a way, becoming a vegetarian has saved my food lmao. When before, he'd eat the shit out of stuff I'd picked out before I had time to get to it... now he says; "if I eat your food, what will you eat!?" WTF

He keeps asking me "are you weak yet?" but when we wrestle, who do you think wins? Jess Walking Tall

hehehe

How do you beat him at wrestling? I can't beat my husband. Sometimes I can get away, but only if I resort to pinching or biting LAUGH

Morning star black bean burgers with mustard and jalapenos is my ultimate favorite food ever.

That sounds delicious!

Gwen, I resort to the dirty fighting too but when he tries to do a move on me, I can either stiffen up so he can't move me/make myself dead weight or wiggle out of it because I am so flexible.

I just climb him like a monkey and get on top, he's only 2 inches taller than I am.

Ah, well that's the problem I have. I'm 5'4, he's 6'1. I'm 120 and he's 195, lol! I stiffen up too, especially when he's trying to move my arms, I'm good at that. But I usually have to resort to biting or pinching if he really wants to pin me, lol
